A rare cultivar we happily picked up from Adaptive Seeds. Similiar in size and taste to Burgundy Amaranth, but instead of having deep burgundy leaves the San Lorenzo variety is green with splashes of red near the leaf base. Seed plumes are a beautiful multi-hued gold, red and pink colours. Nutritious baby leaves are tender enough to eat as salad. As plant matures use larger leaves for steaming or cooking as you would spinach, chard, or kale. Allow plant to grow and bear seed which is easily harvested and threshed. Seeds are a high-protein superfood that can be cooked like quinoa, or used as a porridge, or even popped like popcorn. (~1000 seeds).
